Ponti Balsamic Vinegars of Modena are the result of a delighted blend between selected grape musts and precious wine vinegar, followed by a certified maturation period in different wooden core casks.

Ponti IGP Aromatic Vinegar of Modena ‘Capsula d’oro’ is obtained thanks to a wise union between an excellent wine vinegar and cooked grape must, which come from the seven vines indicated in the specifications (Trebbiano, Sangiovese, Lambrusco, Albana, Montuni, Fortana, and Ancellotta). It comes to maturity in oak barrels and is refined in oak, chestnut, and cherry barriques. After the long refinement time, it expresses a complex and refined bouquet, with clear notes of cooked must, vanilla, and spices. Its flavour is pleasantly bitter-sweet, with reference to the refinement woods in which it comes to maturity. It is excellent for seasoning both cooked and grilles vegetables, flavouring red meats, either raw or during cooking, cheeses and omelettes, but also on ice-creams and strawberries.

Ponti vinegar mill, custodian of a wise art that has been handed down from father to son since 1867, proposes Ponti DOCG Red Wine Vinegar Chianti. After selecting the best Chianti DOCG wines, a scrupulous and careful process of slow acetification begins, followed by a long rest time in larch and Slavonia oak vats, which allows obtaining this excellent vinegar. Its flavour is full, intense, with a marked acidity and big personality. It is very suitable for seasoning green and mixed salads with raw vegetables combined with boiled, roast, and grilled meats; it characterizes in a unique way cooked vegetables, courses that must be marinated, and red sauces. If two teaspoons of this vinegar are added to fruit salad with strawberries, one hour before eating it, its scents are exalted.

Ponti Aromatic icing is produced with concentrated cooked grape must and Ponti IGP Aromatic Vinegar of Modena. It is dark-coloured, with bitter and sweet, balanced and pleasant flavour and scent. It is a delicious garnish for meat, chicken, chips, cheeses, fruit, and sweets.
