The guide line of the new offer is the Raw Manifesto, created by Eataly's Executive Chef, Enrico Panero. Sustainability, healthiness, taste and Mediterranean culture are the main values of the new format that is based on short life cycles fish only, without affecting the species caught in the Mediterranean Sea, by following seasonality and by respecting the minimum sizes and the short chain. Thus a new way of thinking of raw fish is born.
The catch of the day is offered to customers simply with extra virgin olive oil and Sicilian salt, or with marinades made strictly at the moment, to enhance their taste: lemon, raspberry vinegar or apples, ginger and pink pepper, dicers and capers, or fennel are just some of the ingredients used. It is served in small tasting dishes, perfect for an aperitif, or in the classic plateaux.
