New Chocolate Academy Center in Milan

It is the first Italian academy dedicated to the training of professionals in the sector, where the most advanced technologies and machinery meet the Italian culture of craftsmanship. Barry Callebaut inaugurates it with Davide Comaschi, the maitre chocolatier winner of World Chocolate Masters 2013. The Academy will be a reference point for cocoa culture, designed for those professionals who want to improve their skills in the domain of chocolate by learning new techniques and recipes, thanks to an extraordinary team of professionals.In addition to international visiting chefs, there will be a team of renowned and appreciated resident chefs, well known in Italy and abroad: director Davide Comaschi, supported by Alberto Simionato, appreciated chef at Cacao Barry, one of the brands of Barry Callebaut group, and Paolo Cappellini, chef specialised in ice cream production. The training proposed by the Academy also includes courses for enthusiasts of chocolate who want to know better this extraordinary product and deepen both history and culture of cocoa. In the center a wide variety of seminars, theoretical courses, and practical workshops will be offered. The keywords will be creativity, innovation, and expertise: who attends the courses will experience the whole chain of chocolate production, from cocoa beans to the techniques of sales and management of the laboratory.
