Parma Ham limited edition

 

image006The Parma Ham 'Poggio Platinum Selection' of the luxury line Q + by Salumificio Pedrazzoli, will be produced in a limited edition (only 150 pieces) and it will be available from the month of September only on order.
The Poggio Platinum Selection is a DOP ham, obtained from the best thighs of Italian heavy pigs reared by Salumificio Pedrazzoli in the neighboring geographical areas (within 60 km) to its seat in San Giovanni del Dosso, and it is characterized by a seasoning that comes to 30 months, unlike the other Parma ham that must be aged for at least 12 months.
In order to produce this particular ham, Salumificio Pedrazzoli raises its pigs for more than 13 months following a diet specifically designed to provide greater health and sweetness.
image008Despite Salumificio Pedrazzoli prefers to sell the Poggio Platinum Selection exclusively on the bone, it can be ordered in its boneless version too, which will be produced following a particular hand-crafted working and finished with a tie with jute rope, to ensure a better quality ham and a tangible freshness and at the same time give a handcrafted look at the product that keeps all its organoleptic characteristics.
