In 1986 Fabiano Carlotti and his wife Nadia decided to start a new business adventure after leaving the family shop, an old deli store. Thus the “Nuova Gastronomia e Pasticceria” was born. The adventure started from a kitchen room of 40 square meters. Today the structure - over 2,400 sm - spread over four floors: the first one is dedicated to the production of hot food containing gluten, separate from other foods in order to avoid any contamination; the ground floor houses the preparation of the most delicate dishes (seafood, sauces, mayonnaise, etc.), while underground areas are dedicated to the conservation of raw materials.
The products of the “Nuova Gastronomia e Pasticceria” meet high quality standards thanks to the use of raw materials whose quality is guaranteed by the company’s suppliers who share the same principles. The authenticity and quality of the raw materials are linked to the respect for the environment. Since 2007, the water heating is obtained with a solar panel system, while of recent installation is the photovoltaic panels system for the production of electricity.
The dishes have a limited shelf-life because they have no added preservatives and they are made-to-order according to a specific schedule.
The Nuova Gastronomia e pasticceria is ISO9001: 2008 certified since 2007, IFS higher level certificate since 2012, in addition to the certification of product conformity with the technical regulations of the food production brand "Bergamo città dei mille sapori."
